Text[0]=["Brazil Serra Negra","Because of the auctions, Brazil now produces some of the best coffee in the world. A soft, nutty, low acid coffee with nice bittersweet chocolate tastes. This is a great blender for that perfect espresso. Known for its ability to produce rich thick crema on the top of your shot. Soft bean roast lighter for the best balance. Vienna or Full City Roast."]
Text[1]=["Celebes Kalossi Sulawesi","Long known as the best Indonesian has to offer, low/medium acidity with full-bodied earthiness. Like it's neighbor Sumatra, it is known for great aroma. Naturally prepared it is a softer bean. Roast to Full City or French to bring out its best."]
Text[2]=["Colombian Excelso","Excelso refers to the size of the bean. The Excelso and Supremo both come from the same coffee tree, but are categorized by size, 17 screen and up = supremo, lower screens = excelso. My personal thought is that it is every bit as good as the Supremo and at a better price. Nice hard bean and takes an espresso or French roast very well. Great for espressos."]
Text[3]=["Colombian Supremo","Colombian coffees, what can I say that Juan hasn't already said. They are well balanced, medium bodied, and bright. Roast anywhere from light to espresso depending on your personal preference. They are a good hard bean."]
Text[4]=["Colombian Peaberry","Normally each coffee cherry contains two beans. Occasionally a cherry will form with only one bean. Although a different shape, they have exceptional body, aroma, acidity and fragrance. Many believe that all that normally goes into two beans in a cherry are put into one bean giving it the extra zip. Roast these in a frying pan if you like because they roll and keep moving. Very hard beans and roast to all roast profiles well."]
Text[5]=["Colombian Narino Del Abuelo","This is a McAlpin coffee and Mr. McAlpin is a perfection nut. The coffee is drawn from the finest Colombian plantations, with strict standards of preparation. This coffee is prepared in a small mill 'up-stream' from the co-op mill in Narino. This is the best Colombian we have and has more acidity, body and flavor than the other Colombians. Very hard bean, roast to any profile you enjoy. Makes a great espresso."]
Text[6]=["Costa Rica Tres Rios SHB","Costa Rican coffees are exceptionally high grown in volcanic soil. These two factors together produce a very bright and very clean cup. Additionally, these slower grown, dense, high altitude beans (SHB Ð strictly hard bean) can take the heat of an Italian or French roast. I drink this one at home for its near perfect balance of aroma, acidity, body and cup. Roast as dark as you want, the hardest bean we have."]
Text[7]=["El Salvador Santa Rita","A Central America mild coffee that has proven it self for many years. As many of the fine Centrals, it has nearly a perfect balance of aroma, acidity and body. Hard bean that can be roasted to any profile you enjoy."]
Text[8]=["Ethiopian Yirgacheffe","These are amazing and unique coffees. Yirgacheffe is a town in the Sidamo region and coffees from this region will surprise you with their floral and tangerine notes. I like to think of the Yirgacheffes as the 'Tabasco' of the coffees. As a dash of Tabasco will turn an ordinary chicken soup into a great cup of soup, a yirgacheffe will take a medium cup to a whole new level. Many folks like it straight, I like to blend it. Roast it lighter than the base of your blend as you are looking for the acidity or snap it will give your blend and lighter roasts have more acidity. Full City or Vienna roast is a good starting point for this coffee."]
Text[9]=["Guatemala San Pedro La Laguna Atitlan SHB","A classic Guatemalan cup. Deep bodied, stunning acidity, with hints of chocolate and cinnamon. You have to close your eyes when you cup this one but you can get the hint of smoky flavor Guats are known for. Very hard bean and roasts to a nice Italian or French roast. Great in espressos."]
Text[10]=["Hawaiian Kauai Extra","Best known for its aroma this is an everyday coffee that carries itself nicely. Light in body with a mild nutty finish. A great breakfast cup every day. Softer bean and doesn't like to be roasted beyond a light French roast or Full city but that's where it cups the nicest."]
Text[11]=["Hawaiian Kona Fancy Preparation","Aroma is king with this coffee. It is well balanced and will bring you back to the Islands. Smooth, delicate with a caramel-ly finish. Soft bean and cups best at City to Full City roasts."]
Text[12]=["India Mysore Plantation A","Medium to full body, low acid and subtly spiced. A unique cup with flavors you might equate with India. Interesting bean but not overpowering. Medium hard bean roasts best at City roast."]
Text[13]=["Jamaican Blue Mountain","Balanced, rich, delicate and mild. Rare in supply, high in demand plus desirable characteristics, no wonder this coffee consistently fetches such a high price. Roast to Full City and not beyond. It can take the heat but is a waste of your $ to bring out the caramels of dark roasts."]
Text[14]=["Java Aged 'Clipper Ship'","Unique, syrupy body and smooth yet spicy flavor. A very interesting coffee, there is a time in the roast when it smells like chocolate chip cookies! Because it is aged and has lost moisture, it needs to be roasted slower than normal to ensure it roasts evenly through. It also needs to rest over night before brewing. Mixed reactions on this coffee but far more like it than don't. Roast slowly to a full city roast."]
Text[15]=["Java Estate Blawan","Sweet, aromatic and full bodied, not as bold as a Sumatra, not as sweet as a New Guinea, but very smooth. This is the base of the famous 'Mocha Java' blend. It is a mild coffee that needs the boost of a mocha or yirgacheffe to bring it to life. If you like a gentle everyday kind of coffee this could be just that. Medium hard bean roast no darker than light French."]
Text[16]=["Kenya AA Kichwa Tembo","A bright, extremely complex coffee that is truly vibrant. Winey with nice body. It is full of power and character. Like the Centrals, well balanced but with more ZIP. Hard bean and will roast to any profile, I like a Vienna roast for this bean."]
Text[17]=["LaMinita Tarrazu","If you happen to know Bill McAlpin, a legend in the Specialty coffee industry, this is his baby. No coffee in the world gets more attention in the preparation than this coffee. If you wonder what the who's who in Specialty coffee drink at home, this is it. A perfectly balanced coffee. One that combines all the ingredients that a classic cup should contain: sweet aroma, full body, great acidity, and delicately clean aftertaste. All in balance with no impurities. Very hard bean and roasts to Italian or French with ease. Best cup is City to Full City roast. Arguably the best coffee in the world."]
Text[18]=["Malawi Mzuzu Grade 1","A coffee like no other. Very balanced, great aroma, rich and complex, full of fruit and a bright tangerine buzz. Found this coffee by accident, roasted some up and brought it home. The aroma filled the entire house and the acidity as well as the body are ever present. One that I drink at home. Medium hard bean roast best at Vienna or Full City."]
Text[19]=["Mexican Kabuk Altura","Light to medium body with mild acidity and balanced, with delicate fruit and spice overtones. Moderately priced and very popular in blends, also stands on its own as a good coffee. A hard bean that takes a dark roast well. I would use this coffee in French or Italian roasts but also cups well in the City - Full City range."]
Text[20]=["Mexican Peaberry Kabuk","Has the same characteristics as the Flat bean with that extra zip peaberrys are known for. Roasts well to a French or Italian Roast also cups nicely at Full City."]
Text[21]=["Nicaragua Guayacan","Offers a very fragrant cup that is mild in body with a fair amount of acidity. This one surprised us as to just how well balanced it is. Very nice cup and good hard bean. Roasts to French or Italian with ease. Has a nice cup at City roast as well."]
Text[22]=["Panama Baru Indian High SHB EP","A subtly bright, well balanced cup with fruit and dark cocoa tones. One of the nicest of the Centrals. Cups like a very nice Kona. Hard bean roasts well to all shades of darkness and stands by itself in the medium roast range as well."]
Text[23]=["Papua New Guinea Bunum Wo A","These coffees have a bright and delicate acidity, an apple wineyness that sets them apart from the other Southeast Asian coffees. PNGs offer a more delicate, refined and lighter body than Javas. Medium hard bean roasts to French roast well."]
Text[24]=["Puerto Rico Yauco Selecto AA","Grown under very similar conditions and prepared with more attention to detail, many say it is better than Jamaican Blue Mountain coffee. A unique mellow taste with an arresting aroma and pleasant aftertaste. A designer coffee that is grown, picked, prepared and shipped with the sole intention of being a great coffee. It has the balance and cup. Medium hard bean roasts to a French roast but cups best at City to Full City roast."]
Text[25]=["Sumatra","Sumatran coffees capture the wild jungle essence of this tropical Indonesian island. It is an earthy, deep, complex, full-bodied coffee that exhibits low-acidity smoothness. Creamy, sweet, with a touch of butterscotch, spice and grassiness. Naturally prepared gives the beans a special cup. This is one I drink at home and blend with the Costa Rican. Softer bean roast to Full City or Vienna. If you like French roast, blend in some French roasted Costa Ricans."]
Text[26]=["Tanzania Peaberry","Grown on the slopes of Mount Kilimanjaro under the shade of banana trees, Tanzanian coffee is similar to the coffee of its neighbor to the north, Kenya. Bright, clean and aggressively complex. All the goodness of the Tanzanian coffee cherry in one beautiful round bean. Roast to French roast or enjoy at Full City roast."]
Text[27]=["Yemen Mocha Sanani","Distinct, deep, earthy, complex with overlays of dry fruit (think raisin), cardamom, cinnamon and tobacco notes. Yemen coffees are from one of the oldest sources of the bean in the world. You have to try blending this with the Java just to experience the oldest blend in the world 'Mocha Java' Softer bean roast to Vienna or full city. Cups nice at a medium roast as well."]

Text[29]=["Zimbabwe AA+ Peaberry Smaldeel Estate","Moderate acidity, rich flavor, good body and aftertaste. The aroma is sweet and sharp, with a hint of East African 'wild'. Hard bean roasts to Italian and makes a good espresso."]
Text[30]=["Certified Organic Colombian","See profiles of Colombian Supremo."]
Text[31]=["Certified Organic Guatemala","Nearly perfect balance of body, aroma, acidity and cup and organic too."]
Text[32]=["Certified Organic Mexican Altura","Light to medium body with bold acidity and a crisp, refreshing finish. All this and organic too."]
Text[33]=["Certified Organic Sumatra","Meticulously prepared organic coffee with a heavy body, great aroma and mild acidity typical of the Sumatran coffees."]
Text[34]=["Kona Blend","A blend of Hawaiian Kona and the closest thing we have to Kona to produce a very similar profile to the true 100% Konas that are considerably higher priced. Will roast nicely to a french roast, best at Full City Vienna roasts."]
Text[35]=["Genuine Mocha Java Blend","An exotic combination that creates a balance of soft spice, smooth body and a slight berry aroma. A complex coffee that is the worldÕs first coffee blend."]
